On deck with... Captain Tom
Where are you sailing this summer?
We are sailing though the Mediterranean - France, Monaco, Italy.
Favourite spot?
For me Saint-Raphael stands out. It has that magic combination of an historic town with a stunning coastline and Cote d'Azur glamour.
What are the ideal sailing conditions?
Ideally between 8-15 knots of wind. It provides the perfect balance of sailing hard should you want to, or gentle light-wind sailing if that fits your mood. In light winds we can get the spinnaker up and cruise downwind with the sea sparkling around us – champagne sailing.
Can guests join in the sailing?
I actively encourage it, the experience of sailing a racing yacht such as SILVERTIP is a joy. She is entrenched with race history and success, and a privilege to sail.
What are the advantages of sails over motor?
There are endless advantages! Nothing beats the feeling of getting from A to B under sail. With the engines off and gliding through the water with just the sound of the water lapping against the hull is the best feeling. The satisfaction of trimming the sails in order to maximise your speed is also a feeling that I just don’t think you can get on a motor yacht! Last but not least, it’s the environmental factor - sailing is far more environmentally friendly, and economical!
Tell us about your crew…
We have five crew on board. Chef Jess, stewardess Agostina, deckhand Ben, chief engineer Charlie and myself. The crew on board are passionate about sailing, but they are also mad about kitesurfing – in fact, watersports of any kind. The crew love to teach charter guests, or just offer tips for those that are a bit rusty...
When we drop anchor, what watertoys are aboard?
Anything and everything! If you fancy a gentle bit of exercise and scenic tour of the coastline, take one of our paddleboards. Bring along some of our snorkelling equipment and stop off to explore the underwater world too!
For the more energetic, the flyboard might be better suited or even a go on the waterskis. If you still want to continue enjoying the wind, we have two kitesurfs that provide endless exhilarating fun.
What is the beach set up?
We have a very quick beach set up. When we find a secluded bay last minute and can seen that it makes the perfect set up for a beach lunch, it doesn’t take long for it to happen.
Can we swim easily from the yacht?
Absolutely. We have a hydraulic transom door that is perfect for stepping (or jumping) off and into the water.
Is there a bar on board?
We have a perfect little bar area on deck that can be equipped with whatever refreshments you might fancy - depending on the time of day...
In the galley with... Chef Jess
Boulangerie or bread baked on board?
I love to bake for my guests, but you can’t go wrong with fresh from the Boulangerie!
Where do we eat?
When the weather is fine, the cockpit is the perfect spot. We can also make dining work in the lounge below decks if you want a cozy evening.
How do you manage in the SILVERTIP galley?
It’s small but perfectly formed! Organisation is the key.
Where do you source ingredients?
The flavours of the Mediterranean are delicious, and very healthy as well. Local markets are great to find fresh juicy tomatoes, lemons, spices, also the fish caught that morning – everything really.
What is your crowd-pleaser recipe?
Tiramisu is always a favourite among the crew and guests.
If we want to invite friends to join us for dinner, what would be on the menu?
Well, all menus will be tailored to your own tastes. Here’s one I cooked for guests recently, to give you an idea: burrata, pea gaspacho and vianaola salad, followed by Teriyaki beef served with green vegetables and Thai sticky rice with crispy ginger, chilli and peanuts, finshed with chocolate tart.
